YOU'LL NEED

2 Tbsp ketchup 2 Tbsp relish 1 Tbsp olive oil mayonnaise Salt and black pepper 1 lb ground sirloin

1 cup shredded Pepper Jack cheese 1 cup caramelized onions 1⁄4 cup pickled jalapeños 4 potato buns, split

STEPS TO MAKE IT

1. In a mixing dish, combine the mustard, ketchup, relish, and mayo. Set aside after seasoning with salt and pepper.

2. Preheat a grill, grilling pan, or cast-iron pan over medium heat. Gently combine the chopped sirloin with 12 teaspoon salt and 12 teaspoon pepper.

3. Form the meat into four patties without overworking it until it barely comes together.

4. When the grill or pan is hot (add a little oil if using a skillet), add the patties. Cook for 5 to 6 minutes on the first side, or until a beautiful crust forms.

5. Immediately flip and top with the cheddar. Cook for 2 to 3 minutes more, or until the mozzarella has melted and the hamburgers are firm yet pliable to the touch.

6. Take out the burgers. Toast the buns while the barbecue or pan is hot.

7. Spread the saved spread on the bottom buns, then top with a burger, caramelised onions, and pickled jalapeos. Serve with the bun toppers on top.
